Raw Juice and Food Pairing, Thai Fresh Fruit Salad

Now that summer is here, trying to stay cool is a pleasure.  Finding the right food to boost your energy and keep the body cool is the preferred choice.  I found this scrumptious fruit salad created by Chef Cheewinsiriwat of Chiva-Som a luxury health resort in Hua Hin (Thailand).  This salad speaks for itself, refreshing, nutritious and pleasing to the pallet. 

Thai Fresh Fruit Salad
Ingredients: 
4tbsp of fresh orange juice
2 Tbsp of lime juice
2 Tbsp of soy sauce
1/2 Tbsp of honey
3 gloves of garlic chopped
2 bird’s eye chillies chopped
4 1/2 oz red apple, diced
4 1/2 oz rose apple, diced
3 1/2 oz red apple, diced
2 1/4 oz cherry tomatoes
2 1/4 oz guava, diced
1 1/2 grapes, halved lengthways
1 1/2 string beans, cut into 1” lengths and crushed
2 oz. green mango, julienned
1 oz carrots, julienned
8 tbsp roasted ground almonds

 

Method: To prepare the dressing, mix the orange juice, lime juice, soy sauce, honey,
garlic and chillies in a large bowl.  Add red apple, rose apple, green apple, cherry tomato grape, guava and string bean to the dressing. Mix well, then add green mango and carrot.  Sprinkle with ground almond and serve.
